C\u2019est le fief du porc noir ib\u00e9rique, mondialement connu pour ses jambons comme le Pata Negra.&nbsp;<\/p>\n\n\n\n<p>Une alimentation \u00e0 base de gland et les vastes superficies d\u2019\u00e9levage font de la viande de porc noir un produit d\u2019exception, r\u00e9compens\u00e9 par une DOP (D\u00e9nomination d\u2019Origine Prot\u00e9g\u00e9e) \u00ab&nbsp;<em>porco de ra\u00e7a alentajana<\/em>&nbsp;\u00bb.Elle entre dans la composition des meilleurs plats de la r\u00e9gion, en pluma (filet mignon) ou en <em>lombinhos<\/em>, de tendres et croustillants morceaux de porc frits.&nbsp;<\/p>\n\n\n\n<p>Les saucisses ne sont pas en reste, et les anciennes maisons disposent toutes d\u2019une large chemin\u00e9e pour les fumer au feu de bois. Il est en effet utilis\u00e9 dans de nombreuses pr\u00e9parations comme la <em>sopa<\/em>, un bouillon m\u00ealant subtilement huile d\u2019olive, pain blanc rassis, \u0153uf poch\u00e9, ail et coriandre. La <em>miga<\/em>, plat du pauvre \u00e0 l\u2019origine, consiste en une tranche de pain rassis humidifi\u00e9 puis frit et accommod\u00e9 de produits locaux comme le chou, les pousses de navets ou les asperges sauvages. Cette recette est aujourd\u2019hui revisit\u00e9e dans tous les restaurants tendance pour le plus grand bonheur des visiteurs de l\u2019Alentejo.&nbsp;<\/p>\n\n\n\n<p>Ne manquez pas de go\u00fbter \u00e0 la <em>sopa d\u2019Elva<\/em>, agr\u00e9ment\u00e9e de pomme de terre, \u0153uf et fromage frais de brebis, ou \u00e0 la <em>tomatada<\/em>, version chaude du gaspacho. Les tapas sont aussi mises \u00e0 l\u2019honneur avec les <em>past\u00e9is de bacalhau<\/em>, une version plus travaill\u00e9e des accras de morue ou les <em>empadas de galhinhas<\/em>, de d\u00e9licieux chaussons farcis au poulet. Les p\u00e2tisseries cl\u00f4tureront votre festin, confectionn\u00e9es sous toutes les formes avec des pignons, de l\u2019amande, du miel ou de la ch\u00e2taigne.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-monsaraz-et-moura-entre-vignobles-et-oliveraies\"><strong>Monsaraz et Moura, entre vignobles et oliveraies<\/strong><\/h2>\n\n\n\n<p>Sur les bords du barrage d\u2019Alqueva, plus grand lac artificiel d\u2019Europe, la terre est fertile et propice \u00e0 la culture du vin et de l\u2019olive. Autour de Monsaraz, on ne trouve pas moins de 8 appellations reconnues DOP. Vous pourrez visiter les vignobles et participer \u00e0 des d\u00e9gustations pour d\u00e9guster un vin blanc min\u00e9ral et un rouge plut\u00f4t cors\u00e9 et intense. Les domaines Borba, Redondo et Reguengos de Monsaraz forment autant de valeurs s\u00fbres \u00e0 ramener \u00e0 la maison.&nbsp;<\/p>\n\n\n\n<p>Au sud du lac, Moura est aussi la patrie des producteurs d\u2019olives avec plus de 150&nbsp;000 hectares cultiv\u00e9s. Elles se d\u00e9gustent en amuse-bouche sur toutes les tables alentejanes, ou sont transform\u00e9es en huile d\u2019olive \u00ab&nbsp;vierge&nbsp;\u00bb et \u00ab&nbsp;vierge extra&nbsp;\u00bb. Ancestral, le savoir-faire r\u00e9gional leur donne une saveur unique r\u00e9compens\u00e9e l\u00e0 encore par une DOP. Pour un souvenir ou faire plaisir \u00e0 vos amis amateurs de bonne ch\u00e8re, choisissez celles de Moura bien s\u00fbr, mais encore de Campo Maior ou d\u2019Elvas.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alcacer do Sal et Comporta<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Entre ces deux villes, on s\u2019immisce dans un paysage \u00e9tonnant qui nous transporterait presque en Asie. Les <a href=\"https:\/\/espiritodacomporta.com\/fr\/les-rizieres-de-comporta\/\">rizi\u00e8res<\/a> s\u2019\u00e9tendent \u00e0 perte de vue et constituent la plus grande zone de production de riz du pays. Celui-ci est naturellement utilis\u00e9 dans la cuisine de tous les jours, autour d\u2019Alcacer do Sal mais aussi dans tout le Portugal. Ici, on consomme sept fois plus de riz qu\u2019en France, et on l\u2019accommode \u00e0 toutes les sauces.&nbsp;<\/p>\n\n\n\n<p><em>Risotti<\/em> de fruits de mer, d\u2019anguille, de poulpe, riz au chou, aux f\u00e8ves, aux petits pois, \u00e0 la tomate&nbsp;: il sera difficile de tout tester.
